Fulton Burger was founded in 1999 with the opening of its first restaurant on the iconic Fulton Street in New York City's historic DUMBO neighborhood. Designed as a full-service restaurant with a complete bar and table service, it quickly became a destination for local residents and visitors exploring one of Brooklyn's most distinctive neighborhoods.
The Fulton name carries a deeper connection to New York history. Fulton Street was named in honor of Robert Fulton, the American engineer and steam-navigation pioneer whose work helped transform transportation in early New York. His legacy of ingenuity, movement and practical innovation has become a natural source of inspiration for the modern Fulton Burger brand.

Building on the success of its original restaurant, Fulton Burger expanded in 2022 with the opening of its second full-service location in Long Island, New York. Continuing the original concept, the restaurant offered a complete dining experience with a full bar, attentive table service and the same commitment to quality that had defined the brand from the beginning.
As the restaurant industry evolved and consumer preferences increasingly shifted toward convenience without compromising quality, Fulton Burger's leadership recognized a new opportunity. Following market research and operational analysis, the company made the strategic decision to focus its future growth on elevated fast casual—combining premium, made-to-order food with the speed and efficiency of counter service, complemented by a curated selection of beer and wine.
That vision became reality in 2024 with the opening of the first next-generation Fulton Burger location in Park Slope, Brooklyn. The restaurant became the foundation for the brand's new direction, introducing a redesigned menu, streamlined operations, contemporary restaurant design and a refreshed customer experience created for today's fast-paced New York lifestyle.
More than two centuries ago, Robert Fulton helped demonstrate how engineering, persistence and new ideas could change the way people moved through New York and beyond. Fulton Burger draws inspiration from that same spirit—not by recreating the past, but by bringing a distinctly New York attitude toward innovation into a modern restaurant concept.
The connection is expressed throughout the brand through historical imagery, interpretations of Fulton's engineering drawings and the idea of continuous forward movement.
